Today we are going simple. It's called quesadilla night! I haven't felt much like eating (or cooking) lately, and this is my new favorite meal. Good thing hubby likes it, too!

Tortillas (I use wheat)
Sliced cheese (We use muenster (Mr. A) and cheddar (me))
Fillings (e.g. sliced olives, peppers, cooked chicken, lunchmeat (not me anymore), whatever you have on hand)
Sour cream and Salsa for dipping

Heat a skillet or grill pan (nonstick or cast iron work best- I've never tried this with my stainless steel skillet) over medium-high heat. Put a tortilla on the cutting board. Add a layer of cheese, then your fillings, and then another layer of cheese. Top with another tortilla. Put the stack on the skillet and press down slightly. Keep checking to see when the cheese starts to melt and/or the bottom gets crispy. Use a spatula to flip the stack over, and when the cheese is melted again, you're done! Transfer back to the cutting board and slice with a pizza roller.

I can't believe I just wrote out how to make a quesadilla! Is there anyone who has never made a quesadilla?!

Umm. . . yes, I have never made a quesadilla, and seriously, I saw your post, and thought, even I can make that! And then I got really excited. Cause I don't cook and this actually seems like something I can handle. :)

Love the quesadilly recipe, looks good! As for quick go to dinner for starving DH-I have him heat up a pizza or fried crap and let him at it. He enjoys when I'm too tired to cook (and cook healthy) cause then he gets to eat whatever, LOL.

I used to make quesadillas all the time in HS, and I haven't in forever so thanks for posting this, I should make them sometime next week :-)

A quick go to dinner is sometimes breakfast for dinner (eggs/omelets, toast, sausage). easy! Or spaghetti.

yum! I love anything with cheese. Lately we have been making taco tatos. Just what it sounds like a baked potato with taco meat, cheese, sour cream and whatever other taco toppings you like- delish!!

Love quesadillas. During the summer I like to get fresh ears of sweet corn, cook and skin, and add them in. I didn't mean that to rhyme.

My go to quickie dinner is egg salad or (gasp) pre-made cheese-filled pasta. Forget the name...they're half-moon shaped.

Man. I can't even think of a quick dinner.... take out? Haha. I guess poke a fork in a potato, put it in the microwave and stick some meat in a skillet for 5 minutes each side, covered. Maybe a bag of frozen veggies or pre-made salad? Eh. Mainly right now, my husband is living off of frozen burritos, mac n cheese, boiled eggs, and tuna sandwiches.... anything he can make himself. Poor guy. :)

We did a similar kinda dinner tonight - our go-to easy meal is tacos. I always keep corn tortillas and ground beef in the freezer, so the rest is easy to pull together :).

This sounds yummy! I am always up for learning new quick meals. I recently made quesadillas with tortillas, chicken with spices, cheddar, and green onions, dipped in a sauce of salsa, sour cream, ranch dressing, and garlic salt...so good!
